Herbes de Provence

 

This is a marvelous spice blend that you can mix up and keep on hand for red meat, poultry, game and game birds, roasted potatoes, vegetables and omelets.

3 Tbsp. dried Lavender
3 Tbsp. dried Marjoram
3 Tbsp. dried Thyme
3 Tbsp. dried Savory
1 Tsp. dried Rosemary
1 Tsp. dried Basil
1/2 Tsp. dried Sage
1/2 Tsp. Fennel

Combine all the above ingredients in a small jar with a tight-fitting lid and mix well. Store in a dark, cool place. The mixture will keep for years, but is always best if used within one year. This blend makes about 1/2 cup.
